How Each Works
Blade Grinder
A spinning metal blade chops beans at random. The longer you run it, the smaller the average size — but the distribution is completely uncontrolled. You get fine powder mixed with large chunks in the same batch.

Burr Grinder
Two abrasive surfaces (burrs) crush beans to a consistent size. The gap between the burrs determines particle size — adjust it to dial in your grind. Every particle passes through the same gap.

Why Consistency Matters
Water extracts flavor from coffee at a rate that depends on particle surface area. Uniform particles mean uniform extraction — every ground releases flavor at the same rate.
With a blade grinder, the fine powder over-extracts (bitter) while the large chunks under-extract (sour) — in the same cup. You literally cannot fix blade-ground coffee with technique, because the problem is baked in before brewing starts. This is why upgrading your grinder has a bigger impact on cup quality than almost any other equipment change.
Conical vs Flat Burr
