Why They Taste So Different
Hot water extracts different compounds than cold water — specifically, it extracts the acids and some bitter compounds that cold water largely can't dissolve. Cold brew's 12–24 hour steep at room temperature or refrigerator temperature extracts primarily sugars and caffeine, leaving most acids behind.
The result: cold brew tastes smooth, sweet, and chocolatey — like coffee with a lot of the sharp edges removed. Iced coffee tastes like hot coffee poured over ice — the brightness, acidity, and origin character are fully present.
