New Jersey is home to dozens of coffee roasters, but very few roast their coffee on-site, source directly from farms, and serve it fresh in a cafe — all under one roof. Roast Coffee Company does all three. Since 2014, we have been roasting small-batch specialty coffee on our Diedrich roaster at 200 Tuckerton Road in Medford, NJ, and serving it to a growing community of coffee lovers across the state.
Our approach is simple: buy the best green coffee we can find from farms in Ethiopia, Colombia, Kenya, Guatemala, and beyond. Roast it with care to bring out each origin's unique flavor. We roast on a Diedrich roaster — a commercial drum roaster known for even heat distribution and precise airflow control. Diedrich roasters are a favorite among specialty coffee roasters because they give the roaster fine control over development time, bean temperature, and the rate of rise — all of which affect the final flavor profile.
Every roast we do is a small batch. We don't try to roast as many pounds per hour as possible — we roast what we can pay close attention to. Each origin gets its own profile: light roasts are developed slowly and pulled early to preserve brightness and fruit character; darker roasts are pushed further to develop caramel sweetness and a heavier body. We don't apply a single roast curve to everything we roast.
After each roast, we cup the coffee before it goes on sale. Cupping is the industry standard method of evaluating coffee: we brew small portions of each batch simultaneously and taste them side by side, looking for off-flavors, inconsistency, or anything that suggests the roast missed the mark. If a batch doesn't cup well, it doesn't ship.
We roast multiple times per week, and every online order is roasted to order — your beans aren't pulled from pre-roasted inventory. When you place an order, it triggers a roast. Your beans are packaged immediately and shipped the same day, so they arrive within the 3–21 day post-roast peak flavor window that specialty roasters aim for.
The result is coffee that tastes the way it was designed to taste — vibrant, complex, and distinctly different from what you'll find at a grocery store.

Our current lineup includes coffees from Ethiopia, the birthplace of coffee and home to some of the world's most complex and floral varieties; Colombia, known for clean, sweet, caramel-forward profiles; Kenya, which produces some of the most vibrant, fruit-forward coffees on earth; Guatemala, where volcanic soil produces coffees with dark chocolate and brown sugar notes; and Sumatra, prized for its earthy, full-bodied character that holds up beautifully as espresso and cold brew.
We pay attention to how our green coffee is sourced — not just which farm it came from, but how the farmers are compensated and whether the growing practices are sustainable long-term. Specialty coffee prices are significantly higher than commodity market prices, which means farmers who grow exceptional coffee can be paid fairly for the extra attention and skill that quality requires.
