Between roasting, packaging, shipping to a distribution center, shelf time at the warehouse, and eventual shelf time at the store, most commercial coffee is 6 to 12 months old by the time you brew it. The off-gassing is long over. The aromatics have faded. What you're left with is flat, stale coffee — even if the bag looks fine.

A few things to know when your beans arrive.
Very fresh beans (under 48 hours from roast) can taste grassy or under-developed. Let them rest in the bag — CO₂ is still escaping and flavors are still settling. Most beans hit their peak between days 5 and 14.
Fresh coffee is denser and more consistent than stale coffee, which means ratios matter more. A standard starting point is 1:16 (1g coffee per 16g water). A kitchen scale takes the guesswork out completely.
Oxygen is the enemy of fresh coffee. Once opened, store beans in an airtight container at room temperature. Avoid the fridge — condensation and odor absorption degrade flavor fast. Buy in smaller quantities more often if possible.
